Our Story is About creating a sulfite-free wine
The sulfite commonly found in wine is sulfur dioxide (SO2), and you may be surprised to know that sulfites in wine are actually naturally occurring. The fermentation process of winemaking naturally creates sulfur dioxide as a by-product. Consequently, all wine contains sulfites. Sulfite reactions normally affect breathing, but some people with sensitivity have skin reactions, such as hives, or digestive problems, such as abdominal pain or diarrhea. Some individuals experience a mixture of symptoms, including respiratory, skin, and digestive reactions.
"There are bacteria on every surface, including the skins of the grape. The industry's answer to this is to spray the grapes with a solution that contains sulfites. But there is another way to do that. I have been working on a mix of chemicals that evaporates with no residue left on the grape. It is like ozone, which kills bacteria on contact but is a gas. I am taking methods from other areas and applying them to winemaking."
